Beets are not only delicious but very healthy. Although a little high in sugars the fiber and other nutrients balance this veggie.
I especially like freezing then thawing them as it intensifies the nutty sweet and earthy flavors, which pair quite well with the pork carnitas and avocado in carnitas tacos. And at $1 per pound at the farmers market they are an inexpensive and healthy choice.
I roast them in tinfoil packs drizzled with sat, sugar, olive oil and a splash of red wine vinegar. Peel the rough skins just after slightly cooled for best results and admire their gorgeous jewel like color and radiance.
I can just pop them in my mouth as a yummy snack all by themselves but save some for carnitas!
